Chicken Adobo

Chicken Adobo is a Filipino dish made with chicken legs, thighs, breast, wings and some inner parts in a sauce made up of vinegar, soy sauce, garlic, bay leaves, salt and pepper.

Ingredients
  

  • 3 lbs chicken whole
  • 4 tbsp vinegar
  • 6 tbsp soy sauce
  • 1/2 tsp salt
  • 1/2 tsp ground black pepper
  • 1 tsp sugar
  • 5 cloves garlic crushed
  • 4 tbsp cooking oil
  • 1 cup water
  • 3 pcs bay leaves dried

Instructions
 

  • Combine the chicken, vinegar, soy sauce, salt, pepper, sugar, and garlic in a large mixing bowl. Cover and marinate the chicken for 1 hour. 
  • In a saucepan, heat cooking oil. Fry the chicken over medium heat until the edges turn golden brown.
  • Pour in the remaining marinade into the saucepan, add water, and bay leaves. Put the lid and bring the chicken to a boil for 30 minutes.
  • Remove the lid. Cook for 20 minutes using high heat. Stir occasionally until the sauce is reduced and thickened.
