Pork Menudo
Traditional Filipino dish that’s made with generous pieces of pork, potato cubes, diced carrots, green peas, chopped onions and bell peppers in a flavorful tomato-based sauce. It is often garnished with pickles or raisins to add another layer of flavor to the already delicious dish!

How to Cook Pork Menudo
Pork Menudo Preparation
To prepare the pork menudo, begin by cubing two pounds of boneless pork loin into 1-inch cubes. Chop 2 medium carrots and 1 potato into cubes, slice hotdog, and cut 1 medium red bell pepper into small pieces; set aside until ready to cook. Then mince 1 bulb garlic, dice 2 onion into small pieces, and cut 4 tomatoes into cubes; set aside as well.
Cooking Instructions
First, heat up 2 tablespoons olive oil in a wok over medium heat. Add the chopped carrots and cubed potatoes, stir and cook for about 3 minutes. Add the sliced hotdog and chopped red bell pepper. Stir everything together and cook for about 3 minutes. Once done, remove vegetables and hotdog mixture from wok. Set aside.
On the same wok, add in two tablespoons olive oil, minced garlic and diced onion. Saute for about 3 minutes. Add cubed tomatoes, stir and cook for 3 minutes. Add the cubed pork loin. Stir and cook for 10 minutes then season with salt and pepper. Next, add 2 tablespoons oyster sauce, 1 tablespoon soy sauce, 8 oz. tomato sauce, 2 pieces broken dried bay leaves, 3 cups of water. Stir everything together. Put lid and cook for 35 minutes until pork is tender.
Finally, remove cover and stir. Add in the cooked vegetables and hotdog mixture in the wok. Add 1/2 cup raisins, stir for two minutes. Turn off heat. Serve pork menudo with steamed rice and enjoy!
Difference Between Menudo vs Kaldereta vs Afritada
The main difference between these three traditional Filipino dishes lies in their respective cooking styles; while all three use tomatoes as their base ingredient – menudo uses tomato sauce while kaldereta uses whole tomatoes boiled until they break apart into a pulp-like consistency and afritada uses both sauces and bits of tomatoes for added texture throughout its cooking process.
Additionally, each one calls for different types of meat: menudo typically uses pork whereas kaldereta often utilizes beef or goat meat while afritada is traditionally cooked with chicken.
Finally, kaldereta includes olives whereas afritada might sometimes include potatoes while those ingredients are not usually found in menudo recipes unless desired by the chef!
