Stir Fried Chicken with Cashew Nut (Kai Pad Med MaMoang Him Ma Pan)

Stir Fried Chicken with Cashew Nut
Ingredients
- 3 pieces garlic finely chopped
- Baby corn, onion, ear mushroom cut bite size
- 1 cup fresh cashew nuts
- 1 large dried red chili sliced, (can also use small green chili)
- 1 stalk spring onion cut into 1 inch long pieces
- 50 g chicken chopped
Seasoning
- 2 tbsp cooking oil
- 1 tsp sugar
- 2 tsp fish sauce
- 3 tsp oyster sauce
Instructions
- Heat oil in wok over high heat.
- Add cashew nuts and dried red chili, cook until light brown.
- Remove from heat. Add garlic and chicken, cook for 1 minute.
- Then add all vegetables except spring onion.
- Add all seasoning and turn up the heat, cook 1 more minute.
- Turn heat off, add spring onion, and serve!
