Binagoongan sa Gata
Ingredients
- oil for sautéing
- 3 cloves garlic minced
- 1 medium onion chopped
- 2 medium tomato chopped
- 500 grams pork cubed
- 1 tbsp calamansi extract
- 1 tbsp vinegar
- 1/4 cup bagoong (salted shrimp paste)
- 1 tbsp sugar
- 1 tsp salt (to taste)
- 1 cup gata (coconut cream)
- 1/4 tsp ground black pepper
- 1 tbsp patis
- 1 1/2 cup sitaw (string beans)
- 2 medium eggplants sliced
Instructions
- Put oil in the pan and warm it over medium heat. Add the onions, garlic, and tomatoes. Cook for about 2 minutes until softened.
- Add the pork and cook until oil comes out. About 10 to 15 minutes.
- Add kalamansi extract, vinegar, and a cup of bagoong (salted shrimp paste). Continue to cook.
- Add sugar, salt, gata (coconut cream), water (optional) and ground black pepper. Cook until pork becomes tender.
- Add patis (fish sauce), sitaw (string beans), and eggplants. Simmer until vegetables are tender. Don't forget to taste and adjust seasonings as needed.
