Broccoli Cheddar Soup
Ingredients
- 4 tbsp butter
- 4 cloves garlic minced
- 1 whole onion small-sized, chopped
- 4 tbsp all-purpose flour
- 3 cups chicken stock
- 1 whole carrot small-sized, julienned
- 1 head broccoli florets
- 2 cups half-in-half cream
- 2 cups cheddar cheese grated
- 1 tsp salt
- 1/2 tsp black pepper ground
- 1 tsp paprika
Instructions
- Melt the butter and sautée the garlic and onion.
- Add the flour over the mixture, cook and stir over medium heat for two minutes.
- Add the chicken stock, stir.
- Add the carrot and broccoli, stir. Cover and cook for 5 minutes.
- Add half & half cream, stir.
- Add cheddar cheese. Season with salt, pepper, and paprika.
- Serve hot and enjoy!
