Cauliflower Fried Rice
Ingredients
- 1 medium head cauliflower cut into florets
- 1 cup bacon diced
- 3 pcs eggs slightly beaten
- 1/2 cup frozen small peas
- 4 cloves garlic minced
- 1 teaspoon soy sauce
- spring onion chopped
- salt and pepper to taste
Instructions
- Cut cauliflower into florets. Grate into rice-bits using food chopper or finely chop using knife. Yields around 4 cups cauliflower rice.
- Cook bacon for 3 minutes or until golden brown. Set aside.
- Using the same pan, cook 3 pieces beaten eggs. Dash some salt. Set aside.
- Turn on stove to high heat. Put one tablespoon oil. Saute minced garlic. Stir fry 4 cups cauliflower rice. Cook for 3-4 minutes, stir regularly.
- Add one tablespoon soy sauce, bacon, eggs, small peas, and garnish with spring onions.
- Serve hot!
