Beef Kare Kare
Ingredients
- 3 tbsp olive oil
- 4 cloves garlic minced
- 1 piece onion chopped
- 3 lbs beef shanks boiled and sliced (pressure cooked for 40 minutes)
- 1 cup beef broth
- 4 cups water
- 1/2 cup peanut butter
- 1 pouch rice flour and spices NET WT 1.76 oz (50 g)
- 10 pcs long green beans cut into 2 inches length
- 2 pcs eggplants sliced
- 1/2 lb baby bok choy separated in pieces
- 1 tsp salt
- 1 tsp ground pepper
Instructions
- In a large pan, saute garlic and onion over medium heat.
- Add the beef, broth, and peanut butter. Cook for 10 minutes
- Add water, rice flour and spices. Stir occasionally.
- Add long green beans, eggplants, and bok choy leaves then place cover and cook for 5 minutes.
- Add salt and ground pepper to taste.
- Serve hot with rice. If desired, add sauteed shrimp paste.
