Sweet and Spicy Dilis
Sweet and Spicy Dilis, also known as sweet and spicy anchovies, is a popular snack in the Philippines that has been enjoyed for generations. This mouth-watering treat consists of small anchovies that are deep fried until they are crispy and then coated with a mixture of banana ketchup, sugar, and cayenne pepper powder.

1 lb dried fish anchovy (dilis) 2 cups cooking oil 12 oz banana ketchup (340g) 2 tbsp sugar 1 tsp cayenne pepper powder
Rinse the dried Dilis multiple times with fresh water to remove excess salt.
Heat oil in a deep pan over medium heat.
Fry the Dilis for about 10 minutes or until they turn golden brown. Drain the oil and set the Dilis aside.
In another pan, heat banana ketchup and add the fried Dilis. Stir to coat the Dilis evenly with the sauce. Fry for an additional 5 minutes.
Add sugar and cayenne pepper. Continue stirring and frying for 5 more minutes, or until the sugar caramelizes.
Once the sugar has caramelized and the dilis are evenly coated, remove them from the heat. Allow them to cool slightly before serving.
