Sarciadong Tilapia is a mouthwatering Filipino dish that features the beloved freshwater fish, known as tilapia, smothered in a tangy and savory tomato sauce. Clean the fish and make two shallow cuts on each side.
Sprinkle salt evenly over the fish and rub it in gently.
Heat vegetable oil in a large skillet over medium heat until hot.
Fry the tilapia until golden brown on both sides. Remove from the skillet and set aside, leaving about three tablespoons of oil in the skillet.
Sauté garlic and onion until they release a fragrant aroma. Add diced tomatoes and cook for about 5 minutes until softened.
Add water to the skillet and bring to a boil, stirring for about 3 minutes until slightly thickened.
Crack and beat the eggs, then slowly pour them into the skillet while stirring.
Return the fried tilapia to the skillet, season with salt and pepper. Spoon some sauce over the fish until it is partially submerged, being careful not to overcook it!
Transfer the sarciadong tilapia to a plate, pouring the thick, tasty sauce on top. Serve immediately while hot!
