Chicken Adobo is a traditional Filipino dish that has become popular across the world for its unique and delicious combination of flavors. It is a simple stew made with chicken, garlic, vinegar, soy sauce and bay leaves.
In a large mixing bowl, combine the chicken, vinegar, soy sauce, salt, pepper, sugar, and garlic. Let the chicken marinate for 1 hour with the mixture.
Next, heat cooking oil in a saucepan. Fry the chicken over medium heat until the edges turn golden brown.
Now it's time to add some flavor. Pour in the remaining marinade into the saucepan, along with water and bay leaves. Cover the pan and bring it to a boil for 30 minutes.
Once done, remove the lid and turn up the heat. Cook for an additional 20 minutes on high heat while stirring occasionally until the sauce thickens and reduces.
