Ingredients
  

  • 3 large eggs
  • 250 grams shrimp peeled and deveined
  • 8 cherry tomatoes halved
  • 75 grams fresh spinach chopped
  • 4 cloves garlic minced
  • 2 tbsp fresh parsley chopped
  • 2 tbsp olive oil divided use
  • Spring onion thinly sliced for garnish
  • Salt and black pepper to taste

Instructions
 

  • Crack the eggs into a bowl, add salt and pepper, and whisk until well blended. Set aside.
  • Heat half the olive oil in a non-stick skillet over medium heat. Add shrimp and cook for 2-3 minutes until pink.
  • Add garlic to the pan and cook for 1 minute. Add spinach and stir until wilted, about 1-2 minutes. Remove shrimp and veggies from the pan and set aside.
  • Add the rest of the oil to the skillet. Pour in the eggs and cook for 2 minutes until the bottom sets.
  • Evenly spread the cooked shrimp and spinach over the eggs, then top with cherry tomatoes and parsley.
  • Lower the heat, cover the pan, and cook for 3 more minutes until the edges are set and the center is slightly wobbly.
  • Slide the frittata onto a plate, top with spring onion, slice, and serve hot.
