Remove the bones from the rotisserie chicken. Chop the meat into small pieces and set aside.
Chop the onion and keep it ready for cooking.
In a small bowl, combine the water, soy sauce, salt, black pepper, ginger powder, brown sugar, red pepper flakes, and cornstarch. Mix well until the cornstarch is fully dissolved. Set aside.
Heat the olive oil in a large pan over high heat. Add the chopped chicken and cook until it starts to turn golden brown.
Pour the sauce into the pan. Stir well and cook for 2 minutes.
Add the chopped onion and stir for 1 minute.
Add the lemon juice and mayonnaise. Stir until everything is well coated, then cook for 1 more minute.
Remove from heat and transfer to a plate. Top with crushed pork rinds, if using, green onion, and a fried egg.
