Ingredients
  

For the sisig

  • 2 lbs rotisserie chicken bones removed and meat chopped into small pieces
  • 1 tbsp mayonnaise
  • 1 tbsp soy sauce
  • 1 tsp ginger powder
  • 1 tsp brown sugar
  • 1 tsp cornstarch
  • ¼ tsp red pepper flakes
  • ¼ tsp salt
  • ¼ tsp black pepper
  • ¾ cup water
  • ½ medium lemon squeeze juice
  • 1 tbsp olive oil
  • 1 medium onion chopped

For topping

  • 1 tbsp pork rind crushed, optional
  • 1 large egg fried
  • 1 tbsp green onion chopped

Instructions
 

  • Remove the bones from the rotisserie chicken. Chop the meat into small pieces and set aside.
  • Chop the onion and keep it ready for cooking.
  • In a small bowl, combine the water, soy sauce, salt, black pepper, ginger powder, brown sugar, red pepper flakes, and cornstarch. Mix well until the cornstarch is fully dissolved. Set aside.
  • Heat the olive oil in a large pan over high heat. Add the chopped chicken and cook until it starts to turn golden brown.
  • Pour the sauce into the pan. Stir well and cook for 2 minutes.
  • Add the chopped onion and stir for 1 minute.
  • Add the lemon juice and mayonnaise. Stir until everything is well coated, then cook for 1 more minute.
  • Remove from heat and transfer to a plate. Top with crushed pork rinds, if using, green onion, and a fried egg.
