Ingredients
  

  • 1 lb rigatoni pasta
  • 12 oz tomato paste
  • 50 mL vodka
  • 1 pint heavy cream
  • 1 tsp salt in boiling water
  • 1 small onion diced
  • 4 cloves garlic minced
  • parsley chopped
  • parmesan cheese

Instructions
 

  • Heat olive oil in a large skillet over medium heat. Add chopped onion and garlic, stirring occasionally. Cook for 2 minutes.
  • Sprinkle with salt, then mix in tomato paste. Pour in vodka and stir well. Allow it to cook for 3 minutes.
  • Stir in heavy cream and continue cooking for another 5 minutes.
  • Cook pasta according to the package instructions, ensuring it remains al dente.
  • Mix the cooked pasta into the sauce, tossing it to coat thoroughly. If needed, add a splash of hot water to reach the desired consistency. Remove the skillet from heat.
  • Serve in a bowl topped with parmesan cheese and chopped parsley, if you like.
