Ingredients
  

  • 2 lbs shrimp peeled and deveined (tail-on optional)
  • 4 tbsp butter
  • 4 cloves garlic minced
  • 1 tbsp olive oil
  • 1 tsp paprika optional, for flavor and color
  • ¼ tsp red pepper flakes optional, for a bit of heat
  • Salt and freshly ground black pepper to taste
  • 2 tbsp parsley fresh, chopped, for garnish
  • 1 tbsp cornstarch

Instructions
 

  • Prepare the shrimp. Pat the shrimp dry with paper towels. Place them in a bowl and toss with a generous pinch of salt, a few grinds of black pepper, and the cornstarch until lightly coated.
  • Heat the pan. In a large skillet, heat the olive oil and 2 tablespoons of the butter over medium-high heat.
  • Cook the shrimp. Add the shrimp in a single layer. Cook for 1–2 minutes per side, or until they start to turn pink and lightly golden. Work in batches if needed so the pan does not get crowded.
  • Add the garlic. Stir in the minced garlic, paprika, and red pepper flakes, if using. Cook for 30 seconds, stirring often, until fragrant.
  • Finish the dish. Add the remaining 2 tablespoons butter to the skillet. Toss well to coat the shrimp in the garlic butter sauce. Cook for 1 more minute, just until the shrimp are fully cooked through.
  • Garnish and serve. Remove from the heat and sprinkle with the chopped parsley. Taste and add more salt and black pepper if needed. Serve right away.
