This butter garlic shrimp is quick, rich, and full of flavor. The shrimp are lightly coated with cornstarch for a delicate crust, then cooked in a buttery garlic sauce with garlic, paprika, and red pepper flakes for a warm, savory finish.
Prepare the shrimp. Pat the shrimp dry with paper towels. Place them in a bowl and toss with a generous pinch of salt, a few grinds of black pepper, and the cornstarch until lightly coated.
Heat the pan. In a large skillet, heat the olive oil and 2 tablespoons of the butter over medium-high heat.
Cook the shrimp. Add the shrimp in a single layer. Cook for 1–2 minutes per side, or until they start to turn pink and lightly golden. Work in batches if needed so the pan does not get crowded.
Add the garlic. Stir in the minced garlic, paprika, and red pepper flakes, if using. Cook for 30 seconds, stirring often, until fragrant.
Finish the dish. Add the remaining 2 tablespoons butter to the skillet. Toss well to coat the shrimp in the garlic butter sauce. Cook for 1 more minute, just until the shrimp are fully cooked through.
Garnish and serve. Remove from the heat and sprinkle with the chopped parsley. Taste and add more salt and black pepper if needed. Serve right away.
