2tbspolive oil (1 tbsp for frying plus 1 tbsp for the sauce)
1tbspbutter
½cupfire roasted tomato
1tspgarlic powder
2cupsheavy whipping cream
1cupspinach leaves
½cupparmesan cheese
Instructions
Heat oil and butter in a large frying pan over medium-high heat.
Add the shrimp, seasoning with salt, pepper, and Italian seasoning. Cook until the shrimp turn pink on both sides.
Once cooked, remove the shrimp and set aside. In the same pan, add 1 tbsp olive oil.
Add minced garlic and cook for about a minute until fragrant. Then, add fire-roasted tomatoes, chopped spring onions, and garlic powder. Sauté for two minutes.
Pour in the heavy cream, bringing it to a gentle simmer while stirring occasionally.
Add baby spinach and cook for another two minutes.
Stir in parmesan cheese until it melts.
Return the shrimp to the pan and cook for another minute.
