Ingredients
  

  • 1.5 lbs fresh cod cut into 4 fillets
  • ¼ tsp salt
  • ¼ tsp pepper
  • 2 tbsp olive oil
  • 4 cloves garlic minced
  • 15 pieces cherry tomatoes sliced in half
  • 1 tsp ground coriander
  • 2 tbsp butter
  • 2 tbsp white wine
  • ¼ cup basil leaves

Instructions
 

  • Begin by patting the cod fillets dry with paper towels to ensure even cooking and avoid excess moisture. Generously season both sides with salt and pepper.
  • Heat a large pan over medium-high heat, adding olive oil once hot. Gently place the cod fillets in the pan, ensuring they aren't overcrowded. Cook each side for about 4 minutes until they are golden brown and easily flake with a fork. Once done, remove the fillets and set them aside.
  • In the same pan, add minced garlic and sauté for about a minute until fragrant. Stir in cherry tomatoes and ground coriander, cooking until the tomatoes soften.
  • Pour in the white wine, stirring as you bring the mixture to a gentle simmer. Add basil leaves and cook for an additional 2 minutes.
  • Return the cooked cod fillets to the pan, spooning the sauce over them. Cook for another 2 minutes.
  • Serve hot, garnished with fresh herbs like parsley or dill, if desired.
