Fluffy Pancakes are a breakfast favorite that has been around for centuries! Traditionally, pancakes were made from a batter of eggs, milk, and flour. The addition of baking powder and other ingredients makes them light and fluffy.
In a small bowl with egg yolks, add 2 tbsp of milk and 1/4 tsp vanilla extract then whisk together until fully combined. Next, sift and add 3 tbsp of all-purpose flour and 1/2 tsp baking powder into the mixture. Whisk together until smooth.
In a separate mixing bowl with egg whites, slowly add 3 tbsp of sugar while mixing it with an electric mixer. Mix together until fluffy. Add egg whites mixture into the mixing bowl with egg yolks. Whisk them together until smooth.
Heat a non-stick pan over low heat. Lightly grease pan with cooking oil. Once pan is warm enough, pour a small amount of batter onto the pan, making a small round shape. Put lid and cook for two minutes. After two minutes, remove the lid. Add more batter on top then put the lid back on. Cook for another two minutes.
Next, flip the pancake. Put lid and cook for another two minutes. Repeat this process with remaining batter. Serve warm with your favorite topping such as maple syrup or fresh fruit!
