Put oil in the pan and warm it over medium heat. Add the onions, garlic, and tomatoes. Cook for about 2 minutes until softened.
Add the pork and cook until oil comes out. About 10 to 15 minutes.
Add kalamansi extract, vinegar, and a cup of bagoong (salted shrimp paste). Continue to cook.
Add sugar, salt, gata (coconut cream), water (optional) and ground black pepper. Cook until pork becomes tender.
Add patis (fish sauce), sitaw (string beans), and eggplants. Simmer until vegetables are tender. Don't forget to taste and adjust seasonings as needed.
