Binagoongan sa Gata

Ingredients
  

  • oil for sautéing
  • 3 cloves garlic minced
  • 1 medium onion chopped
  • 2 medium tomato chopped
  • 500 grams pork cubed
  • 1 tbsp calamansi extract
  • 1 tbsp vinegar
  • 1/4 cup bagoong (salted shrimp paste)
  • 1 tbsp sugar
  • 1 tsp salt (to taste)
  • 1 cup gata (coconut cream)
  • 1/4 tsp ground black pepper
  • 1 tbsp patis
  • 1 1/2 cup sitaw (string beans)
  • 2 medium eggplants sliced

Instructions
 

  • Put oil in the pan and warm it over medium heat. Add the onions, garlic, and tomatoes. Cook for about 2 minutes until softened.
  • Add the pork and cook until oil comes out. About 10 to 15 minutes.
  • Add kalamansi extract, vinegar, and a cup of bagoong (salted shrimp paste). Continue to cook.
  • Add sugar, salt, gata (coconut cream), water (optional) and ground black pepper. Cook until pork becomes tender.
  • Add patis (fish sauce), sitaw (string beans), and eggplants. Simmer until vegetables are tender. Don't forget to taste and adjust seasonings as needed.
