Ingredients
  

  • 4 cups sweet rice washed and drained
  • 1 cup brown sugar
  • 2 cans coconut milk 400mL
  • 4 cups water

Latik Syrup

  • 2 cans coconut milk 400mL
  • 1 cup brown sugar

Instructions
 

  • In a large pot, wash and drain the rice. Add brown sugar, coconut milk, and water then stir.
  • Bring to a boil then simmer. Stir and cook until all liquids are absorbed.
  • In a separate pan, combine the coconut milk and brown sugar. Cook until the liquid thickens and caramelized.
  • Transfer the rice into the baking pan. Pour the latik syrup on top of the rice, spread evenly. Bake in a preheated oven at 350°F for 25 minutes.
  • Remove from oven when it is done. Let it cool down before serving.
