Beef tapa is a traditional Filipino dish made with thinly sliced beef that has been marinated in a mixture of soy sauce, calamansi juice (or lemon juice), sugar, and various spices.
Start by slicing the beef sirloin into thin strips, about 1/4 inch thick.
In a bowl, add the beef strips, minced garlic, brown sugar, salt, pepper, and soy sauce. Squeeze the calamansi juice and mix well to ensure that each piece is evenly coated with the marinade.
Cover the bowl with plastic wrap and let it marinate in the refrigerator for at least 1 hour or overnight for best results.
Heat a non-stick pan over medium heat and add two tablespoons of oil to prevent sticking.
Once hot, add the marinated beef strips in batches and cook for about 3-4 minutes on each side or until browned and slightly crispy on the edges.
Once all batches of beef tapa are cooked, serve hot with rice and enjoy!
