Instructions
  1. Beat the eggs and chop onion, green and red pepper.
  2. In a medium non-stick skillet over medium heat, melt butter. Add onion, green pepper, red pepper, and ham. Cook for 5 minutes then set aside.
  3. In a separate small non-stick skillet over low heat, melt the butter. Pour in eggs, cook for 2 minutes. Add the filling on one side of omelette, sprinkle cheese. Cover and cook for another 3 minutes.
  4. Fold the omelette in half and slide it onto a plate. Ready to serve.
