Instructions
  1. Separate egg yolks from egg whites using a wide-spaced strainer.
  2. In a large bowl, beat egg yolks. Add condensed milk, evaporated milk, and vanilla extract. Stir thoroughly then set aside.
  3. On a small pan over medium heat, melt granulated sugar until it turns golden brown and becomes syrup.
  4. Remove from heat. Pour hot syrup into aluminium fan mold coating all sides and bottom part evenly. Cool it down for at least 5 minutes.
  5. Pour the egg-milk mixture into each mold then cover it with aluminium foil. Steam for 30 minutes.
  6. To serve, run a knife along the edges of the fan mold. Place a serving plate over it then quickly invert the flan. Enjoy!
